- 50 g rolled oats
- 30 g protein powder
- 130 ml milk (of choice)
- 1 large egg
- 1 tsp cinnamon
- 1/4 tsp baking powder
- light cooking spray
- 2 tbsp peanut butter
- toppings of choice (fresh fruit, granola, nuts, ...)
Add rolled oats to a blender or food processor and blitz until it resembles a fine flour.
Add the protein powder, milk, egg, cinnamon and baking powder to the blender too and blitz everything until you have a texture like pancake batter.
Heat a lightly oiled frying pan over medium high heat. For each pancake, spoon 2-3 tablespoons of batter onto the pan.
Cook for about 50 seconds or until surface of pancakes have some bubbles and a few have burst. Loosen with a thin spatula, carefully flip and cook the other side until browned.
