MANGO RICE PAPER ROLLS WITH PEANUT BUTTER DIPPING SAUCE

 

We recently partnered with recipe and content creator, Joyce Shih from SSAYANG (probably your new favourite plant-based lifestyle guide) and she helped create the most mouthwatering, heartwarming, and oh-so-gorgeous recipe for vegan rice paper rolls that we’ve tried so far.

 

These rice paper rolls are perfect for a pre-dinner snack, or as a healthy option for game night! And it’s so easy to put together, we guarantee it’s going to be your go-to meal for your next potluck.

 

Mango Rice Paper Rolls with a Peanut Dipping Sauce.

Vegan, GF option
Serves 2-3

 

Ingredients:

 

Rice paper rolls:

- 8 pieces of rice paper
- 1/2 carrot
- 1/2 cucumber
- 1/2 cup red cabbage (about 90g)
- 1/2 mango
- 4 sprigs of fresh mint leaves
- 2 blocks of firm tofu
- Salt & pepper to taste

Peanut dipping sauce:

- Juice of 1 lime
- 1 tsp coconut sugar
- 1 tbsp soy sauce (or tamari if GF)
- 1 tbsp sesame oil
- Salt & pepper to taste
- 4-5 tbsp water

 

Method:

 

1. Prep all the filling ingredients. Thinly slice the carrot, cucumber, red cabbage and mango and set aside. Slice the tofu and lightly pan fry, seasoning with some salt and pepper. Pick the mint leaves off the stems. Set all the
filling ingredients aside to set up your rolling station.
2. Make the dipping sauce. To a small mixing bowl add the Smooth Peanut Butter, lime juice, coconut sugar, soy sauce, sesame oil and salt and pepper. Mix to combine. Slowly add the water into the sauce a tablespoon at a time, Keep stirring until the sauce is well combined and smooth.
3. Garnish the sauce. Roughly chop up the nuts from the Nutty Protein Trail Mix and sprinkle over the sauce.
4. Make the rice paper rolls. Prepare a wide dish of water. Quickly dip the rice paper in water for a few seconds and lay it over your work surface. Add small handfuls of each of the fillings to the centre of your rice paper. Fold both edges on the sides in, and start rolling from the top end down, towards you. Make sure to tuck all the fillings in, as you roll so the fillings are secure. Once the roll is done, slice it in half and place on your serving plate. Repeat until all the ingredients are used up.
5. Serve. Serve immediately. Dip the rice paper roll in the peanut dipping sauce and enjoy!
