To celebrate our 4th Birthday, we made this beautiful, tasty, and healthy (of course!) watermelon cake with less than 10 ingredients and 30 mins prep time. Want a cake to beat the summer heat, and quench some thirst? This is it.
We topped it with our all-time signature Hazelnut Blackforest Granola for a cocoa flavour, you can also double the chocolate indulgence by drizzling some Chocolate Hazelnut Nut Butter on top! The coconut chunks in the nut butter will be a perfect match with the toasted coconut chips on the watermelon cake.
How to:
1. In a small bowl, mix ricotta, softened cream cheese (or yoghurt in your preference) & honey together until the mixture is well combined.
2. Spread the mixture onto the watermelon slice and top with fresh berries, fresh limes, Hazelnut Blackforest Granola and toasted coconut chips for crunch
3. Drizzle extra honey or nut butter based on personal preference.
